I’ve been having so much fun testing out recipes with 88 Acres products. If you don’t know about 88 acres, check them out here! They are an awesome Boston-based company that makes nut-free butters and snacks using seeds. Not only are they allergy-friendly but the seeds they use are protein-packed super foods! Everything I’ve tried is delicious, and as someone that has an almond allergy I’m loving recreating recipes that would typically have tree nuts with seeds instead!
This week I played with their chocolate pumpkin seed butter. It has NO sugar added but has a rich chocolatey taste and was the perfect base for the energy balls I made.
These are the perfect snack for any time of day – a little bit sweet, VERY chocolatey and packed with protein and superfoods like cacao powder, pumpkin seeds and coconut!
Nut-free chocolate energy bites
Prep time: 10 minutes | Cook time: 0 minutes | Total time: 40 minutes
Ingredients
1/4 cup coconut oil
1/4 cup cacao powder
1/2 cup unsweetened coconut (flakes or shreds work!)
1/4 cup coconut flour
1 tsp vanilla
1/4 tsp salt
1-3 scoops collagen powder (optional for protein)
1/2 cup Enjoy Life mini chocolate chips (optional)
Directions:
Place all ingredients except chocolate chips in food processor
Blend until dough comes together
Fold in chocolate chips
Roll into bite-sized balls and place on lined baking sheet
Place rolled dough in the freezer to set for at least 30 minutes
Store in air-tight container in the fridge or freezer and enjoy any time of day!
